I cooked Fall. Chorizo, quinoa and collard greens in carnival squash; baked sweet potatoes and apples.
Quick and easy dinner — baked potato with microwaved lentils and goat cheese. If you’re really in a rush, you can get a plain baked potato from Wendy’s for a buck.
Ended up being way too much food and I gave half away.
I just made the best salmon marinade. Measurements are approximate:
- 1/4 c lite soy sauce (low sodium)
- 1 tsp sesame oil
- grated ginger
- black pepper
- cayenne pepper
- 2 Tbsp sorghum
- tiny bit Penzy’s Northwoods Fire
- tiny bit garlic salt
Thaw fish and let marinade about 10-15 min. Cook at 375 for 18 minutes (or fish is 145). Spoon sauce over fish while cooking every 5 minutes — it gets thicker as it cooks.
The best way to keep fresh ginger around is to just wrap it in plastic and freeze it. To use, grate with a little cheese grater. Keeps forever.
I learned a magical way to cook potatoes from the Internet. They’re like half baked potato, half potato chip. Brush with oil or butter, season and cook at 425 for about 45 min or so.
Lemon Chicken Rice Soup
Put a cut up chicken in a pot and cover with water (6-8 cups) and add a bunch of salt. Cook until chicken is 165 degrees.
Take chicken out to cool and strain broth with wire strainer.
Add wild rice (1.5 cups), chopped leeks or onions, juice of 2 or more lemons and pepper (to taste).
Chop up all the chicken and add it back in.
Whisk together an egg and 2 tsp corn starch and tsp of water. Slowly add to soup while stirring. Simmer about 3 minutes to thicken.
So delicious and easy!!
Chicken taco salad with mango. Cooked some chicken wings in the crockpot with tomato juice, cumin, chili powder and adobo about 3 hrs. Delicious!
My family always called it “slumgolli” but it turns out the name is “slumgullion.”
Culinary genius: 1 can salmon, Parmesan cheese, 1 egg and Cheez-Its.
P.S. Don’t forget to mix Sriracha with your ketchup.
Leftovers for lunch. Super easy to make:
- 2 bone-in chkn breasts
- 4 small potatoes
- 1 onion
- jar of stewed tomatoes
- seasoning of choice
Put chicken in dish, season with garlic salt, oregano, basil whatever. Put quartered potatoes around it. Put sliced onion on top. Season some more. Put tomatoes on top.
Cover, cook at 400 for 45 min. Uncover, cook at 425 for 20 min (or until chicken is 165 degrees).
One dish meal. Nom it.
Mmmmm biscuits & sausage gravy + frittata (green garlic, sausage, scallions and a pound of cheese). I’m sure it’s all Paleo vegan.
1 can black beans, 1 can Rotel, 1/2 carton chicken broth, 2 lbs frozen chicken wings, cumin, adobo and chili powder.
Crockpot on low 4 hrs. Pull out the wings and let cool. Purée 1 cup of the soup and pour it back in.
Add in a bag of frozen gumbo veggies and the meat off the wings. Cook another half hour or so.

Crockpot BBQ pork with sautéed napa cabbage, green garlic, broccoli and asparagus.
Oh wow — Lemon rice and fish stew. Husband says: “I feel all healthy inside!”
Cook 3/4 c jasmine rice. When it is done, stir in the juice from one lemon.
In large skillet, Sauté green garlic and celery in a little butter (you could use leeks or green onions or whatever). Add in 3 cups chicken broth, 3 Tbsp sugars and pinch or two of kosher salt. Simmer a bit, then stir in rice.
Sink fish filets into broth and rice mixture. Simmer until cooked through. I used 2 frozen talapia filets, took about 15 min.
Serve topped with mint or other fresh herb.
Braised celery with jowel bacon, sausage, onions and salsa-style fire roasted tomatoes; served on grits.
I was craving polenta. So rich that my plate is just a dessert-sized plate.
I’ve managed to eat everything in the kitchen today and am sure the scales will be up tomorrow. :-)
Mushroom spinach omelette and roasted cauliflower + okra for dinner.
