Mmmmm biscuits & sausage gravy + frittata (green garlic, sausage, scallions and a pound of cheese). I’m sure it’s all Paleo vegan.
1 can black beans, 1 can Rotel, 1/2 carton chicken broth, 2 lbs frozen chicken wings, cumin, adobo and chili powder.
Crockpot on low 4 hrs. Pull out the wings and let cool. Purée 1 cup of the soup and pour it back in.
Add in a bag of frozen gumbo veggies and the meat off the wings. Cook another half hour or so.

Crockpot BBQ pork with sautéed napa cabbage, green garlic, broccoli and asparagus.
Oh wow — Lemon rice and fish stew. Husband says: “I feel all healthy inside!”
Cook 3/4 c jasmine rice. When it is done, stir in the juice from one lemon.
In large skillet, Sauté green garlic and celery in a little butter (you could use leeks or green onions or whatever). Add in 3 cups chicken broth, 3 Tbsp sugars and pinch or two of kosher salt. Simmer a bit, then stir in rice.
Sink fish filets into broth and rice mixture. Simmer until cooked through. I used 2 frozen talapia filets, took about 15 min.
Serve topped with mint or other fresh herb.
Braised celery with jowel bacon, sausage, onions and salsa-style fire roasted tomatoes; served on grits.
I was craving polenta. So rich that my plate is just a dessert-sized plate.
I’ve managed to eat everything in the kitchen today and am sure the scales will be up tomorrow. :-)
Mushroom spinach omelette and roasted cauliflower + okra for dinner.
Tortilla crusted talapia from Kroger (half of one), quinoa and black beans and ramps (taste a bit like green onions with a bite, but the greens are sweet).
Spicy chicken chili
Threw 4 frozen chicken thighs in crockpot on high for 2.5 hrs. Cut them up and added one jar tomatoes, 1 can Bush’s seasoned chili beans, chili powder, cayenne pepper and salt. Simmered 10 minutes.
Given extra time and stuff on hand, there should have been onions, bell peppers and garlic or some other stuff.
Everybody is out of sketti squash, so I subbed roasted cauliflower, collard greens and Brussels sprouts. Added okra, garlic and baby portabellas to the sauce.
Somebody else cooked dinner! Woohoo! Steak, hashbrowns, mango, kohlrabi, and steamed cauliflower + broccolli.
No rice noodles, so I used orzo.
Hamburger night, with baked sweet potato and mango. Side of squash.
Salmon baked with fire roasted tomatoes, sweet potato and broccolli.
Chicken noodle soup.
Sauté onion, carrot, turnip and whatever for a bit. Add some garlic and a splash of chicken broth and cook a little more. Add 1.5 cups broth, 1 can fire roasted tomatoes, paprika, salt, pepper and other spices ( I used thyme and Pensy’s Mural of Flavor). Bring to boil and add the frozen chicken wings that you didn’t know what to do with. Cover and simmer until wings are done. Pull out wings and add 1/2 cup orzo or little noodles. Pick all the meat off the wings and throw it back in. Cook until noodles are done. Nom.
