Chicken noodle soup.

Sauté onion, carrot, turnip and whatever for a bit. Add some garlic and a splash of chicken broth and cook a little more. Add 1.5 cups broth, 1 can fire roasted tomatoes, paprika, salt, pepper and other spices ( I used thyme and Pensy’s Mural of Flavor). Bring to boil and add the frozen chicken wings that you didn’t know what to do with. Cover and simmer until wings are done. Pull out wings and add 1/2 cup orzo or little noodles. Pick all the meat off the wings and throw it back in. Cook until noodles are done. Nom.

Ok, I messed up a tiny bit on day 1 of “No Sugar February” because of 8 raisins and 2 teaspoons of dressing
but …
LOOK WHAT I MADE.
Wheat Berry Salad.
Mostly adapted from this recipe linked here.
Cook up some wheat berries in salty water. Drain when done.
Roast up some veggies of your choice (I used purple potatoes, carrots, sweet potato and yam). I used olive oil and some herb mix I have that is oregano, red pepper, rosemary and other stuff.
Put 3 heaping spoonfuls of cooked wheat berries in a bowl and mix in some of the veggies.
Add in a few chopped walnuts, some raisins, chopped dates or other dried fruit and nuts.
Add a tiny bit of vinaigrette and mix together.
I used my spicy sorghum vinaigrette I made the other day (I omitted the Woodford).
So good!

So delicious and easy! Butterfly some chicken breasts, season with salt & pepper, then cover with pesto. Bake at 400 until almost done (150 internal temp). Put sliced tomatoes on top, a little s&p on those, then top with parmesan. Continue baking until cheese is bubbly and brown and chicken is done (165 internal temp). If cheese not brown enough, put under high broiler for a minute.

I used a tomato that had seen better days that I was about to throw out. Man, am I glad I saved it! It cooked up beautifully with lots of flavor and really added juiciness to the chicken!
